Browned Butter Caramelized Banana Bread

'Not your Grandmas Recipe! This is something with the same love and nostalgia of a Grandmothers banana bread, but with an elevated and gourmet twist, a perfect baked good to warm the soul on these chilly winter days.'
Ingredients...
- ½ cup (113 g) unsalted butter
- ¾ cup (165 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla paste
- 3-4 (360 g) large over ripe bananas
- ½ cup skyr yogurt, or greek, plain
- 1 ½ cups (220 g) ap flour
- 1 tsp baking soda
- 1 tsp Diamond Crystal kosher salt
- 1 ripe banana, sliced
- 2 tbsp butter
- 2 tbsp sugar

Preheat the oven to 350°F. Line a 10x5 loaf pan with parchment bottom and two sides, butter the whole thing.

In a small saucepan, brown the butter. Do this by melting the butter, then letting it foam and cook for 3-5 minutes, stirring occasionally until flecks of brown form at the bottom of the pan. Transfer it to a bowl and whisk to let it cool slightly.

Whisk the sugar and butter together for a minute or so. Crack in the eggs and add the vanilla. Whisk vigorously into a smooth mixture.

Add the bananas directly into the bowl. Use a fork to mash them into small pieces, but you don't need the bananas completely smooth. Switch to your whisk and whisk together. Now add in the yogurt and mix thoroughly.

Add in the flour, baking powder and salt and stir to combine into a nice, thick batter.

To a fresh pan add the 2 tbsp of sugar and allow to slowly melt together without touching on medium low heat. As the sugar begins to caramelize you can swirl the pan around gently to get the sugar to mix more, when it looks all golden in colour add in your butter and swirl together until almost all melted. Add in your slices of banana and toss together with the caramel and continue to cook together for a couple minutes until the bananas are soft and cooked. Allow the mixture to cool before gently folding into the batter.

Transfer to the parchment-lined loaf tin and bake at 350°F for 50-60 minutes, or until a toothpick inserted comes back clean.
