Sometimes called a "Hippie" or "Glory" bowl, a Buddah bowl is basically just a giant bowl filled with a mixture of veggies, grains, greens, nuts/seeds and and topped with a delicious dressing. As part of my January fridge clean out, I work on my cupboards too, by cooking up bit packages of grains, toasting opened packages of nuts and seeds and keeping them in the fridge or jars (in the case of nuts/seeds) for easy assembly of a simple but tasty bowl meal. Since I seem to have an abundance of sweet potatoes in my cold cellar, here is my version of the healthy, hearty Buddah bowl.
Mexico loves to celebrate Día de los Muertos or Day of the Dead - a multi day holiday gathering that begins on November 1. We thought this was a perfect time to share this Mexican-inspired lasagna made with simple easy ingredients that are just layered together. We used a store-bought rotisserie chicken (or see our vegetarian version suggestion) for a dish that came together in about 10 minutes. The entire family will enjoy it whether you are celebrating Mexican-style or Canadian-style Halloween.
This Mexican Chopped Salad with Chipotle Pepitas is the perfect hearty salad to accompany any grilled meat for fish, or serve as a meal on it's own. So delicious and satisifying you will want to dig into it immediately!
We've all been immersed in these crazy times for over 6 weeks and we have to admit, it's starting to take it's toll. On top of all of this, Donna-Marie is also in the process of moving her home of 24 years. She and her husband are downsizing, so cleaning out the freezer is doubly important. She pulled together this chili for a weeknight meal with what she had in her pantry, refrigerator and freezer. For a vegan version, skip the meat and dairy topppings and substitute more vegetables such as mushrooms and eggplant.
