Anna's Wholegrain Pancakes

Yes, wholegrain pancakes can be fluffy, tender and tasty. Letting the batter sit for 5 minutes before cooking your pancakes allows the whole wheat flour and oats to absorb the liquid, which keeps the batter light and delicate. I usually prefer regular rolled oats in baking because they hold their shape and texture, but quick-cooking oats work equally well here because they soak up the liquid quickly and still make a fluffy pancake.

Anna Olson's Chewy Chocolate Brownie Cookie

These more-ish cookies have a lovely crackled satin surface that looks just like a well-made pan of chocolate brownies and they have a chocolate flavour that’s just as intense due to the proportionately large quantity of chocolate in the recipe. Get that glass of cold milk ready! We may just have a plate of these on March 25, 2023, when Anna comes to Relish to launch her new cookbook - Baking Wisdom.
Anna Olson's European Gingerbread Cut-Out Cookies

Here is a nice twist on the holiday classic, decorated gingerbread cookies. This recipe is inspired by speculoos, a notably buttery and nicely spiced cookie common in Europe. The subtle differences between a traditional North American–style gingerbread and this recipe are the use of honey in place of molasses and the addition of a little cardamom, ground anise and black pepper to the spice mix in place of ginger.

This fruit pie is all about fresh, ripe strawberries. Here they are paired with floral and tart hibiscus and topped with Chantilly cream. The acidity of the hibiscus complements the berries’ sweetness, and this is now a new summer classic for me.
Hot Chocolate Nanaimo Bars

A twist on a classic can be a beautiful thing, and adding hot chocolate mix to a Nanaimo bar really works! Nestled between the traditional coconut base and the melted chocolate topping is a layer of hot chocolate - spiked custard icing. When the bars are topped with mini marshmallows, the hot chocolate twist is complete.
