High Protein Strawberry & Peanut Butter Overnight Oats

High protein overnight oats are one of the easiest, more satisfying breakfast recipes you can make. If you are not a fan of meal prep, we love that you can make several jars the night before and have them ready to go in the morning. We love soy milk as it's one of the healthiest non-dairy beverages to drink because it's high in protein and nutrients like calcium and vitamin B12. However if you prefer another plant-based beverage, go ahead and substitute.

Ingredients...

  • 1 cup non-fat plain Greek yogurt
  • 1/2 cup unsweetened soy milk
  • 1/4 cup natural peanut butter
  • 1 tbsp pure maple syrup
  • Pinch salt
  • 1 cup old-fashioned rolled oats
  • 1 cup chopped strawberries, plus more for garnish

Method...

  1. In a bowl, whisk together yogurt, soy milk, peanut butter, maple syrup and salt together. Stir in oats and strawberries.
  2. Cover and refrigerate until the oats have softened, at least 8 hours or up to 3 days. Garnish with more chopped strawberries, if desired.

Makes 3 servings

Chef Tips: 

  • Consider using frozen berries in place of fresh.
  • Spoon mixture into small jars with lids for an easy grab and go breakfast.
