Strawberry Cobbler

Let's kick off summer with the perfect summertime dessert!  This Strawberry Cobbler comes together easily with a few simple ingredients. With a tender buttery crust filled with sweet strawberries, everyone will want seconds.

Ingredients...

  • 4 cups halved fresh strawberries, washed (about 1 1/2 lbs)
  • 6 tbsp unsalted butter (85 g)
  • 1 cup all-purpose flour, spooned and levelled (125 g)
  • 3/4 cup granulated sugar (150 g)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk (non-dairy is fine)
  • 1 tsp Nielson-Massey vanilla extract
  • Optional: Sanding sugar, vanilla ice cream

Method...

  1. Preheat oven to 350 F. Place the butter in a 9-inch round/square pie dish, cake pan, 10-inch cast iron skillet or any 2.5L baking dish. Place dish in the oven while it is heating to melt the butter.
  2. In a large bowl, whisk the flour, sugar, baking powder and salt together. Add the milk and vanilla and stir until batter is smooth.
  3. Remove the pan from the oven and add the strawberries in an even layer. Pour the batter evenly over the berries. Sprinkle with coarse sanding sugar, if using.
  4. Bake in preheated oven for 55 to 60 minutes. The cobbler is done when a toothpick inserted in the centre comes out mostly clean, with maybe just a few crumbs on it.
  5. Remove from the oven and set it on a wire rack. Cool for 5 minutes before serving. Serve warm with vanilla ice cream.

Chef Notes: Because this dessert uses fresh fruit, its is best consumed within 5 days. Cover leftover cobbler (if there is any) and store in the refrigerator.
