Fried Feta Bites with Hot Honey Drizzle

Our own Chef Cassidy created this appetizer for our recent Step Into Spring class. It's a great starter if you are hosting some friends over our first long holiay weekend. Enjoy with a glass of light crisp white wine or go all out with an Aperol Spritz!

Ingredients...

  • ¼ cup all-purpose flour
  • egg, lightly beaten
  • ½ cup  panko breadcrumbs
  • Freshly ground black pepper
  • Kosher salt
  • 7 oz  block feta cut into 1-inch cubes
  • ⅓ cup Backyard Honey Company liquid honey
  • ½ tsp  red pepper chili flakes
  • Finely chopped herbs: chives, dill, basil, thyme…

Method...

  1. Set out three shallow bowls or plates and add the flour in one, the whisked egg in another and the panko to the third one. Season each with salt and pepper. 

  2. Dredge the feta cubes in flour then transfer to the bowl of whisked egg.  Coat well, then press into the bread crumbs to evenly coat. Transfer each coated piece to a small baking sheet, and freeze for 10 to 30 minutes.

  3. In a small pot,  heat the honey and chili flakes together until lightly bubbling. Turn down and keep warm.

  4. To fry the feta: Heat a medium-sized skillet over medium heat and add ¼ cup of olive oil.  When the oil is hot, retrieve the cheese from the freezer and cook the pieces for 2-3 minutes per side, or until golden brown.

  5. To serve: Plate on its own, as a simple appetizer, with a drizzle of warm honey, a sprinkle of fresh herbs and a pinch of flaky salt.  Or, use to top salads or add to a charcuterie board… etc…

Serves 4 as an appetizer
