Chili Honey Grilled Cheese

If you love sweet ‘n salty… or sweet ‘n spicy… of gooey ‘n cheesy… or crisp ‘n buttery… or if you’re like me and you like all of the above then you are in for a treat and you are going to loooooooove this sandwich! It's more of an idea than an actual recipe, but once you've tried it, you won't be able to eat it any other way.
Ingredients...
- 4 slices sourdough
- 1/4 cup mayonnaise
- 1 tbsp chili-garlic sauce (Sambal Oelek)
- 1 tsp Togarashi seasoning blend
- 2 Tbsp Backyard Honey Company liquid honey
- 2/3 cup shredded white Cheddar cheese
- 2/3 cup shredded OKA cheese
- Softened butter or mayonnaise
Method...
- Layout slices of bread. In a bowl, combine the mayonnaise and chili-garlic sauce and spread onto each slice of bread.
- Sprinkle two slices with Togarshari spice and drizzle with honey; top evenly with shredded Cheddar and Oka cheese. Sandwich together with the remaining slice. Spread one side with the softened butter or mayonnaise.
- Place a non-stick or cast iron skillet or grill pan over medium to medium-high heat. Once hot, place buttered-side of sandwich down on hot pan. Spread the butter onto the up-side (second) side of the sandwich. Grill 3 to 5 minutes until golden brown, then flip and grill the other side until golden and the cheese is melty.
- Serve immediately with extra honey if desired.
