Triple "B" Braised Red Cabbage
A favourite recipe of ours from Emily Richards and the Best of Bridge cookbook series. We love serving this up during Oktoberfest along with some delicious pan seared pork schnitzel and pierogies or noodles. Some red cabbage dishes call for the cabbage to be coarsely chopped, but because it cooks for so long, you can chop it about 1/2-inch thick.

Turkey Pozole
This hearty soup is actually more of a stew and is absolutely ideal for using Thanksgiving leftovers. Traditionally, the broth is richly flavored with a purée of tomatillos, chiles, garlic and cilantro which is blended and cooked to a thick, rich sauce. I like to use a quick cooking "hack" and use a jar or store-bought green salsa verde. If you have tomatillos, use 1 lb of husked and halved, and puree them in the food processor instead of using the salsa verde.
