The cobbler dessert has been an American summer staple dessert since the 1850's and the first written recipe for a cobbler was published in 1881 by Abby Fisher an escaped slave. Junteenth celebrations (June 19th) are celebrated to commemorate the emancipation of enslaved people in the US. It also happens to fall on Father's Day in North America, so what better way to celebrate dad, then giving him a delicious seasonal dessert.
In honour of mom's everywhere, we are sharing a recipe for one of our favourite sandwiches - the Croque Madame. If you've never had a croque madame before, you are in for a treat. This sandwich originates in the bars and cafes of France and begins as a "Croque Monsieur", but when you pop a fried egg on top you transform into a Croque Madame. It requires a knife and fork to eat this outrageously cheesy sandwich and is perfect as a lunch or light dinner. Serve it with spring greens tossed with a light vinaigrette (and perhaps a glass of rosé). Happy Mother's Day everyone.
The most moist and delicious lemony pancakes! You don't even taste the ricotta, it just lends richness and moisture. These have been on of our favourites for years and I often make them when I have a half a carton of ricotta leftover. My favourite way to serve them is with warmed maple syrup and a dollop of blueberry jam or fresh blueberries.
Growing up in Whitby, the Ukrainian and Polish heritage was very strong throughout the area. My parents had many Ukrainian friends and I grew up being introduced to a lot of Ukrainian food. I have very fond memories of eating these pancakes at my friend Irene's house. Her grandmother used to make them for us and we devoured them. They can be eaten for breakfast, as an appetizer or a side dish. Whichever way you choose to eat them, a dollop of sour cream is an absolutemust-havefor the topping.
