Nonna's Italian 'Penicillin' Soup

This cosy comforting chicken soup is known to cure just about anything that ails you. My daughter requested it when she wasn't feeling well. It hits the spot on a "flu-y" or chilly day for sure!

Ingredients...

  • 2 tbsp Sarafino Virgin olive oil
  • 1 tbsp unsalted butter
  • 1 large onion, finely chopped
  • 4 stalks celery, finely chopped
  • 1 large yellow bell pepper, finely chopped
  • 4 medium cloves garlic, minced
  • 8 cups low-sodium chicken broth (preferably homemade) + maybe a little more
  • 3 large carrots, diced
  • 1 parmesan rind, optional
  • 1 1/2 tsp kosher salt
  • 1/3 cup uncooked pastina (tiny pasta like Acini de pepe)
  • 2 eggs, lightly beaten

    2 1/2 to 3 cups rotisserie or leftover chicken
  • Garnishes: Grated Parmesan, finely chopped fresh rosemary and/or thyme, freshly ground black pepper

Method...

  1. Heat a large Dutch oven or soup pot on medium heat. Once the pot is warm, add oil, butter, onion, celery and bell pepper; stir to combine. Cook 4 to 5 minutes or until the onions are translucent. Add the garlic, stir well and cook for 1 minute longer.
  2. Add the broth, carrots, Parmesan rind (if using) and salt. Bring the mixture to a boil, the reduce heat to a steady simmer and cook for 20 to 25 minutes, uncovered, or until vegetables are nice and tender.
  3. Remove the Parmesan rind. With a slotted spoon, remove 2 cups of the diced veggies and set aside.
  4. Using an immersion blender, puree the broth/veggie mixture remaining in the pot until smooth.
  5. Add the pasta and the two lightly beaten eggs. Bring the mixture to a boil, then reduce to a steady simmer and cook until the pasta is tender (Acini de pepe takes about 9 minutes), stirring occasionally.
  6. Add chicken, reserved veggies and. Stir to combine. Cover and let soup rest for 20 minutes. Taste and adjust the seasonings, adding more salt if needed.
  7. Serve with grated Parmesan, a scatter of finely chopped fresh herbs and freshly ground black pepper. Hug-In-A-Bowl!
