EASY WEEKNIGHT TACOS

Ingredients...
- 1 tsp vegetable oil
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 1 1/2 lbs lean ground beef, turkey or chicken
- 2 - 3 tbsp Mythic Mole Organic Fair Spice Rub*
- 1 tsp salt
- 2/3 cup low sodium beef or chicken broth
- 1 cup frozen corn, thawed
- 12 soft corn tortillas
- Sour cream
- Sliced radishes
- Green onion
- Pickled jalapenos
- Salsa
- Cojita or feta cheese, crumbled
Method...
- Preheat the oven to 250 F.
- In a medium non-stick skillet, heat oil over medium heat. Add onion and cook until softened an lightly browned around the edges, about 3 to 5 minutes. Add the ground meat and garlic. Cook until browned, about 8 to 10 minutes, stirring occasionally, to break up the meat.
- Add the Mythic Mole seasoning blend, beef broth and corn. Bring to a simmer and cook, uncovered, until sauce is slightly thickened, 2 to 3 minutes.
- Reduce heat to low, cover and simmer 10 minutes.
- Meanwhile, place tortillas on an ungreased cookie sheet, cover with foil and bake for 3 to 5 minutes.
- To assemble tortillas, layer with sour cream, beef mixture, radishes, green onions, jalapenos, salsa and cheese.
Serves 6
*Mythic Mole Seasoning Rub is available from Relish Cooking Studio. You can substitute a pre-made taco seasoning mix or a blend of 2 tbsp chili powder, 1 tbsp ground cumin, 2 tsp salt, 1 tsp smoked paprika, 1 tsp ground coriander & 1/2 tsp cayenne pepper.
