Clean The Pantry Cookies

If it's time to spring clean your pantry, these Clean-The-Cupboard cookies are sweet & salty, and loaded with so many delicious things. They are ideal if you have half bags of chocolate chips*, coconut, cereal, dried fruit even hidden Halloween candy.

Ingredients..

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp Neilson-Massey vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 3/4 cup all-purpose flour
  • 2 cups quick oats
  • 1 cup rice krispie cereal (or other crispy cereal)**
  • 1/2 cup butterscotch chips
  • 1/2 cup chocolate chips
  • 1/2 cup coconut
  • 1/2 cup mini M&M's

Method...

  1. Preheat oven to 350 F. Line two baking sheets with parchment paper or a baking sheet liner.
  2. In the bowl of an electric mixture, cream butter and sugars. Add eggs and vanilla and mix well.
  3. Add salt, baking soda and flour, and mix until combined. Remove mixer, add oats and stir by hand  until well combined. Add cereal, chips, coconut and M&M's and stir by hand until combined.
  4. Using a medium cookie scoop, place on baking sheet, leaving about 1-inch between cookies (about 12 cookies per sheet). Gently press the tops of the cookies with the palm of your hand.
  5. Bake in preheated oven for 10 minutes (they may look a little underbaked). Remove from the oven and allow cookies to sit on baking sheet for 5 minutes then transfer to a baking rack and cool completely.

Makes about 2 dozen cookies

Chef DM's Baking Tips:

  • If you have chocolate bars in your pantry, chop them up in place of chocolate chips. 
  • You can substitute any crispy flake cereal for Rice Krispies. Just break them up with your hands a little before adding to the cookie batter.
  • This is a really thick dough and these cookies do not flatten out very much at all. You can tap the cookie sheet on the counter to flatten them slightly if you’d like.
  • Be sure not to over bake these, they will look a little under-baked when you take them out of the oven.
