Strawberry Salsa

Summer is the perfect time for simple, flavourful recipes that require a few ingredients and as little steps as possible. This recipe is no exception! It's perfect as a side next to BBQ chicken, or served on its own as a poolside snack with some chips.
Ingredients...
- ¼ lb strawberries hulled and chopped
- ¼ cucumber peeled and chopped
- ½ Jalapeno, finely chopped
- 2 tbsp red onion thinly sliced
- 2 tbsp fresh basil thinly sliced
- 1 tsp white wine vinegar
- ½ tsp fine sea salt
- 1-2 tsp sugar

Combine all in a medium bowl, adding more or less sugar to taste based on the sweetness of strawberries. Toss, cover and refrigerate for 1-24 hours to allow flavours to blend together.
- Serve with either corn chips or salted kettle chips as a snack, or pair with some BBQ chicken as a side for a meal!
