No Cook Shrimp Rolls

Get a taste of East Coast vibes with this delicious summery sandwich. Combine a light mayo dressing and pre-cooked shrimp, then top a buttery toasted bun of a lobster roll. The prep is so easy and the whole meal is more affordable for the home cook than lobster.
Ingredients...
- 1 lb frozen cooked shrimp, thawed and coarsely chopped
- 4 tbsp mayonnaise
- Juice and zest of 1 lemon
- 2 stalks celery, diced
- 2 tbsp chopped fresh dill or cilantro
- Salt and freshly ground black pepper
- 4 tbsp softened butter
- 4 top-split buttery hot dog rolls, grilled (optional)
- Chopped fresh parsley
Method...
- In a bowl, combine shrimp, mayonnaise, juice and zest of lemon, celery, dill/cilantro, salt and pepper. Chill until ready to serve.
- Spread softened butter on split hot dog rolls. Open and grill until lightly toasted.
- Top with shrimp mixture and garnish with chopped parsley.
- You must serve these rolls with kettle chips.

RELISH TIPS FOR MAKING THESE SHRIMP ROLLS
- If you’re using thawed, frozen shrimp, spread the thawed shrimp out over several layers of paper towels and gently pat them dry to remove as much excess water as possible before mixing them into the salad.
- Using top-sliced hot dog buns isn’t strictly necessary, but it sure does make eating these rolls easier!
- You can use parsley, chives, or tarragon in place of the dill or cilantro, if you prefer.
