VIRTUAL SUNDAY SUPPER: Rack of Lamb
Spring is officially here, so let's celebrate with the flavours of the season. In today's Sunday Supper class we work with a cut of meat many love but are afraid to cook - rack of lamb. First we'll create an herb and nut pesto (paste) to coat the outside, then learn to oven roast for perfect medium-rare results. You'll also create a red wine jus with the pan drippings for a delicious drizzle over the finished dish. While the meat roasts, we'll create a quick side dish of wilted greens to serve alongside this succulent Sunday Supper.
MENU: Rack of Lamb with Garlic Almond Pesto Crust, Hot Wilted Greens
FOOD KIT: Includes one 8-chop rack of lamb, ground almonds, fresh mint, Swiss chard and a few dried herbs to complete this dinner. Pick up is 12 - 24 hours prior to class. PLEASE NOTE: Food kits are available for customers in the Kitchener-Waterloo area ONLY. Those living outside the KW area, please purchase OPTION 2: Registration & Zoom Link.
