In today's virtual baking class this freezer-friendly and make-ahead version combines our tried and true flaky pastry-making techniques, a smooth and perfectly spiced pumpkin filling and a sweet, salty pecan topping. You'll first learn to make perfect pastry dough, learn how to "blind-bake", how to effectively roll out pastry dough and shape a perfect pie. Then you'll learn the special secret to making a delicious pumpkin filling and finally we'll create a crunchy, salty pecan topping that takes this pie from "oh yeah to WOWZA". It's salted pecan meets perfect pumpkin pie - a match made in heaven!
