Sarafino Fleur De Sel of Trapani
Fleur de Sel is formed on the surface of the saline water on less windy and humidity-free days, more often in the corners of the salt ponds. It is harvested by hand according to the ancient techniques handed by generations of salt workers. This salt is historically very valuable as it represents a very small part of the entire harvest, and is naturally composed of very soft crystals. It is savoury, clean and slightly bitter in taste thanks to the presence of magnesium.
Ideal Pairings: This salt is not used in place of salt during the cooking process, but is added just before serving to boost the flavour of your dish. Use on eggs, meat, fish, vegetables, chocolate or caramel.
