Compared to the Roma Tomato, the San Marzano tomato is thinner and more pointed. It's flesh is much thicker and has fewer seeds and a stonger, sweeter taste with less acidity. DOP stands for "Denominazione d'Origine Protetta" which translated is Protected Designation of Origin. This certification protects the reputation of the regional foods and eliminates the unfair competition and misleading of consumers by non-genuine products.
