Potato Skins Make A Perfect St. Paddy’s Day Pi

March signals two fun dates on the calendar – Pi (14th) and St. Patrick’s Day (17th). Pi Day is an annual celebration of the mathematical constant Pi (3.14) and the “techie”crowd in this city enjoy poking a little fun mid-month. But of course the revelry gets a little crazy on St. Patrick’s Day, especially in Uptown Waterloo as we watch a sea of green parading past our store starting early in the day.

So to honour these two occasions, we give you a combination recipe for Vegetarian Shepherd’s Pie Potato Skins. While it isn’t a traditional “pie”, it still has a shell with a filling, which in our mind, makes it a pie. These potato skins are a veg head’s dream come true…vegetables, filled with other vegetables and topped with more vegetables. They are comforting, delicious, hearty and super satisfying.
